Easter Chowder

Ingredients
- 3 cup Leftover mashed potatoes
- 3 cup Ham stock (boiled down from bone and drippings)
- 1 can Creamed corn
- 1 cup Milk or cream
- 3 cup Frozen or canned corn (drained)
- 1 lb Or so, chopped leftover ham
- 1/2 each Onion, diced
- 1 as needed Seasonings to taste. Start with no salt as ham is salty.
Directions

1Saute the onion in a little butter or oil until tender.

2Combine all remaining ingredients in a pot.

3Stir well to combine and heat over medium to medium low heat.

4Stirring occasionally.

5Once chowder is heated through, taste and add seasoning to your liking.

6I added some garlic powder, onion powder, parsley & white pepper to mine.

7This could easily be put in a slow cooker and left on low all day as well.
