Easy Beef Enchiladas

- 1 1/2 lb. ground beef
- 1/2 c. chopped onion
- 2 (10 oz.) cans enchilada sauce
- 8 oz. Cheddar cheese, shredded
- soft tortillas (flour)
- salt and pepper
Directions

1Brown and drain meat. Add onions, 1 can of enchilada sauce and salt and pepper to taste. Simmer 10 minutes. Place a rounded tablespoonful of meat mixture on each tortilla. Sprinkle with a spoonful of cheese. Roll up. Place seam side down in a greased baking pan. Top with remaining can of enchilada sauce and remaining cheese. Cover with foil. Bake at 375° for 30 minutes.
