  • 6 slices bacon
  • 2 diced potatoes
  • 1 diced onion
  • 6 eggs, beaten
  • salt and pepper
  • bell pepper, mushrooms, ham, sausage and cheese (you can use hash browns or whatever you have)

    Fry bacon.

    Pour most of the grease off, but leave some in pan.

    Set bacon aside to cool.

    In same pan, add potatoes and onions.

    Cook until brown.

    Pour beaten eggs over mixture, then cook until almost set.

    Add crumbled bacon.
