- 2 diced potatoes
- 1 diced onion
- 6 eggs, beaten
- salt and pepper
- bell pepper, mushrooms, ham, sausage and cheese (you can use hash browns or whatever you have)

1Fry bacon.

2Pour most of the grease off, but leave some in pan.

3Set bacon aside to cool.

4In same pan, add potatoes and onions.

5Cook until brown.

6Pour beaten eggs over mixture, then cook until almost set.

7Add crumbled bacon.
