Easy Brunch Casserole

  • 1 lb. hot sausage
  • 6 slices bread, cubed
  • 1 c. sharp Cheddar cheese, shredded
  • 2 c. milk
  • 6 eggs
  • 1 tsp. salt (optional)
  • pepper to taste
  • 1 tsp. dry mustard

Directions

    Brown sausage and drain well.

    In a 9 x 13-inch casserole dish, layer bread, sausage and cheese.

    Repeat, using the remaining bread, sausage and cheese.

    Slightly beat the eggs (I use a wire eggbeater) in a large mixing bowl.

    Add the salt, pepper and dry mustard.

    (I sift the dry mustard as I add it; it is hard to blend.)

    Beat to blend.

    Add the milk.

    Beat again and pour over the layers.
