Easy Chicken Curry

- 1 pound Boneless Skinless Chicken Breasts (other Types Can Be Used)
- 1 whole Onion, Sliced In Half Lengthwise, Then Into Wedges And Separated
- 1 clove Garlic, Minced
- 2 cans (14.5 Oz. Can) Tomatoes (whole Or Chopped)
- 1 Tablespoon Olive Or Vegetable Oil
- 1 Tablespoon Red Curry Powder
- 1 Tablespoon Garam Masala
Directions

1Cut the chicken into bite-sized pieces.

2You can also use chicken thighs, if you prefer.

3Sprinkle chicken with the curry and the garam masala and set aside.

4Heat oil in a skillet and put in onions.

5Cook onions for a few minutes until limp.

6Add garlic and chicken.
-
7Cook chicken until browned but not quite finished.
-
8Add in tomatoes, and let simmer for 20 minutes or so.

9Serve over riceJasmine is best.

10Also, you can add diced raw potatoes when you add the chicken, but I prefer it without the potatoes.

11Salt is a mustto taste, and if you like it spicier, add more curry powder.
