Easy Chile Rellanos

- 18 whole Ortega green chiles
- 1 lb. Jack cheese, cut in 18 strips
- 1/2 lb. grated Cheddar cheese
- 1/2 tsp. salt
- Tabasco to taste
- 5 large eggs
- 1/4 c. flour
- 1 1/4 c. milk
- dash of pepper and paprika
Directions

1Remove seeds from chiles; rinse, drain and pat dry.

2Place a strip of Jack cheese on each chile and fold chile over cheese. Beat eggs and gradually add flour, beating until smooth.

3Add milk, pepper and Tabasco.

4Beat thoroughly.

5Arrange 1/2 of the stuffed chiles in a well-greased 7 x 13-inch pan.

6Sprinkle the chiles with 1/2 of the Cheddar cheese and sprinkle with paprika. Repeat layer.

7Pour the egg mixture over the top.

8Bake uncovered in 350° oven for 45 minutes.

9Serves 6 to 8.
