  • 2 c. coconut
  • 3/4 stick soft margarine
  • 3 eggs
  • 1 (13 oz.) can evaporated milk
  • 2 c. sugar
  • 1 tsp. vanilla
  • 2 unbaked pie shells

Directions

    Mix together. Pour into 2 unbaked pie shells.

    Brush edges of pie shell with water before baking to keep crust from getting too brown while waiting for coconut to brown.

    Bake at 350° until filling is lightly browned, 30 to 45 minutes.
