- 2 c. coconut
- 3/4 stick soft margarine
- 3 eggs
- 1 (13 oz.) can evaporated milk
- 2 c. sugar
- 1 tsp. vanilla
- 2 unbaked pie shells
Directions

1Mix together. Pour into 2 unbaked pie shells.

2Brush edges of pie shell with water before baking to keep crust from getting too brown while waiting for coconut to brown.

3Bake at 350° until filling is lightly browned, 30 to 45 minutes.
