Easy Cumin Refried Beans

- 1 Tablespoon Olive Oil
- 1 Onion, Diced
- 4 cloves Garlic, Minced
- 1/2 cups Low Sodium Chicken Stock
- 2 Tablespoons Cumin
- 1/2 teaspoons Garlic Salt
- 1 teaspoon Pepper
- 2 cans 14 Oz Cans, Pinto Beans, Drained And Rinsed
- 1/2 cups Cotija Cheese
- 1/2 cups Cilantro, Chopped
Directions

1In a medium saucepan over medium heat add olive oil, onion and garlic.

2Let the mixture bloom for 2 minutes.

3Add the chicken stock, cumin, garlic salt and pepper.

4Bring this mixture to a simmer.

5Add the drained and rinsed beans.

6Bring to a simmer, cover and let it cook for 20-30 minutes, stirring occasionally and checking the liquid level.

7Add more stock if needed.

8As you stir, lightly mash the beans, but also leave some whole.

9Taste and adjust seasoning if needed.

10Spoon into a large bowl and top with cotija cheese and fresh cilantro!
