- 1 lb ground beef
- 1 (17 1/2 ounce) jar enchilada sauce
- 2 cups Mexican blend cheese
- 8 corn tortillas
Directions

1Heat oven to 350.

2Cook beef until browned.

3Stir 1/2 cup of enchilada sauce and 1 cup of cheese into beef mixture.

4Spread 1/2 cup of the sauce in a 13 x 9 baking dish.

5Spoon about 4 tablespoons of the beef mixture into each tortilla.

6Roll up and place seam side down in baking dish.

7Top with remaining sauce and cheese.

8Bake for about 20 minutes or until the cheese melts.
