  • 3 cups chopped peeled apples
  • 2 cups sugar
  • 12 cup apple juice
  • 3 eggs
  • 34 cup vegetable oil
  • 1 12 teaspoons vanilla
  • 3 cups flour
  • 2 teaspoons cinnamon
  • 1 teaspoon allspice
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups chopped pecans
  • 8 ounces candied red cherries, chopped
  • 8 ounces green glazed cherries, chopped
  • 8 ounces candied pineapple, chopped

Directions

    In lg bowl, mix apples, sugar and apple juice.

    Let stand 10 minutes.

    In sm bowl, mix eggs, oil, and vanilla.

    Add to apples; mix well.

    Combine flour, cinnamon, allspice, baking soda and salt.

    Add to apples; mix well.

    Fold in pecans, and fruit.

    Line 3 loaf pans with waxed paper; grease the paper.

    Pour batter into pans.

    Bake at 350* for 1 hour, or until cakes test done.

    Cool in pans for 10 minutes; turn out and cool on wire racks.
