  • 1 can (15 1/2 oz.) chunk pineapple
  • 1 Tbsp. vinegar
  • 2 Tbsp. brown sugar
  • 1 Tbsp. cornstarch
  • 1/2 tsp. salt
  • 2 Tbsp. margarine
  • 1/2 lb. cooked chicken (thin strips)
  • 1/2 lb. cooked ham (thin strips)
  • 1 medium green pepper (thin strips)
  • 2 Tbsp. sliced scallions
  • 1/4 tsp. garlic powder
  • 1 1/2 c. Minute rice

Directions

    Drain pineapple juice into measuring cup and add enough water to make 1 1/2 cups.

    Combine liquid, vinegar, brown sugar, cornstarch and salt in bowl; set aside.

    Heat margarine in large skillet.

    Saute ham, chicken, green pepper, scallions and garlic powder until chicken is lightly browned.

    Stir in liquid mixture and bring to boil.

    Stir in pineapple and rice, cover and remove from heat.

    Let stand 5 minutes.
