Easy Lamb Curry

Ingredients
- 1 tablespoon flour
- 1 teaspoon curry powder
- 1 tablespoon vegetable oil
- 3 tablespoons onions, chopped
- 1 cup celery, diced
- 2 cups beef broth
- 14 cup ketchup
- 2 cups lamb, cooked and diced
- 12 cup apple, chopped
- 23 cup rice, uncooked
Directions

1In a small bowl, combine flour and curry powder.

2Set aside.

3Place oil in a skillet over medium-high heat.

4Add onions and celery and saute lightly.

5Stir in flour mixture and blend until smooth.

6Add broth and ketchup.

7Reduce heat, cover and simmer about 1 hour, stirring occasionally.

8Add lamb and apple.

9Simmer another 20 minutes.

10Cook rice according to package directions, omitting salt and butter.

11Place 1/2 cup rice in each of four shallow bowls.

12Spoon lamb mixture evenly over rice.

13Serve hot.
