  • 2 1/8 c. flour
  • 1 1/3 c. sugar
  • 3 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 c. shortening
  • 16 maraschino cherries, chopped
  • 1/4 c. cherry juice
  • 1/2 c. milk
  • 4 large egg whites, unbeaten
  • 1/2 c. chopped nuts

    Sift first four ingredients.

    Add next four ingredients and beat 2 minutes.

    Add egg whites.

    Fold in nuts.

    Bake in two 8 or 9-inch round cake pans or a loaf pan at 350° for 30 to 35 minutes. Frost with a buttercream frosting.
