Easy Microwave Fried Rice

  • 1 cup long grain rice
  • 1 1/2 cups boiling water
  • 3 teaspoon VEGEMITE
  • 1 onion, finely chopped King Sooper's 1 lb For $0.99 thru 02/09
  • 3 rashers bacon, finely chopped
  • 1 cup sliced mushrooms
  • 1 clove garlic, crushed
  • 1 cup frozen peas, thawed
  • 2 eggs, lightly beaten

Directions

    Combine rice, water and Vegemite* in a microwave proof dish.

    Cook on HIGH for 12 minutes.

    Heat a frying pan or wok, add a little oil and cook eggs until just set.

    Remove from pan.

    Heat a little extra oil and stir fry onion, bacon, mushrooms and garlic until onion is tender.

    Add peas and rice and stir fry 2-3 minutes.

    Garnish with slices of egg.
