Butterscotch Apple Cake

  • 2 eggs
  • 2 c. sugar
  • 1/2 c. vegetable oil
  • 2 tsp. vanilla
  • 2 c. all-purpose flour
  • 2 1/2 tsp. cinnamon
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 1/4 tsp. nutmeg
  • 4 c. peeled, tart apples, chopped
  • 1 c. walnuts
  • 1 c. butterscotch chips

    In a large mixing bowl, combine eggs, sugar, oil and vanilla. Combine dry ingredients; add to egg mixture and mix well (batter will be stiff). Stir in apples and nuts. Spread into greased 9 x 13-inch pan. Butterscotch chips are sprinkled over top of batter. Bake at 350° for 45 to 50 minutes.
