- 4 large potatoes
- 1 onion
- 1 garlic clove
- 1 tbsp tomato paste
- 1 pinch salt and pepper
- 750 grams mince meat
- 1 breadcrumbs
- 1 parmesan cheese
Directions

1preheat oven to 350F

2in a large pot fry chopped onion and garlic.

3add mince meat and fry till brown.

4add salt and pepper.

5add the 3 cans diced tomatoes and the tomato paste.

6cook for about 30 mins on low heat till sauce thickens stirring occasionally.

7peel potatoes and slice into very thin slices.

8in a deep rectangle oven dish sprinkle a thin layer of breadcrumbs on bottom then a layer of the tomato sauce.

9then add a layer of the sliced potatoes.

10add layer of tomato sauce sprinkle with breadcrumbs add second layer of sliced potatoes, layer of tomato sauce sprinkle breadcrumbs, a third layer of sliced potatoes final layer of tomato sauce with a sprinkle of breadcrumbs and generous amount of parmesan cheese.

11make sure each layer of sauce covers potatoes well.

12cover dish with foil and bake for an hour or till potatoes are soft.

13take out of oven and let it rest for about 15 - 20 mins before serving square size pieces.

14letting it rest helps the dish stay together layered in a stacked square piece and not fall apart when placing on the plate.
