- 1/2 cup butter (softened)
- 1 cup white sugar
- 2 eggs
- 1/2 tsp vanilla extract
- 1 1/2 cup all-purpose flour
- 1 tsp baking powder
- 1 pinch salt
- 1 cup chopped peaches (fresh/canned)
Directions

1Preheat oven to 175C

2Cream the butter and sugar till light and fluffy.

3Add in eggs one at a time.

4Stir in the vanilla extract

5Reserve 1/4 cup of flour aside

6Mix well remaining flour, baking powder and salt.

7Stir in creamed mixture

8Use reserved flour to coat the chopped peaches.

9Fold the fruit into batter

10Spread evenly into a 15x21cm greased loaf tin.

11Bake for 50-60 minutes in preheated oven, or until toothpick comes out clean from cake
