  • 1/2 each: red pepper, green pepper and yellow pepper
  • 2 Tbsp. olive oil
  • 1/4 c. chopped basil leaves (fresh)
  • 1/2 lb. cooked penne pasta
  • 2 crushed or minced cloves garlic (optional)
  • 1 tsp. red pepper flakes (optional)

Directions

    Thinly slice the halves of peppers.

    Saute in 2 tablespoons of olive oil and garlic, if you choose, until tender-crisp.

    Toss with basil, cooked pasta and red pepper flakes for that extra oomph!
