Ingredients
- 3 to 4 lb. chuck roast
- seasoned flour
- 1 small can beef broth
- 5 potatoes, cubed
- 6 to 7 carrots, cubed
- 4 medium-sized white onions
- 2 jars whole button mushrooms (drain water off)
- approximately 1 tsp. salt
- approximately 1/2 tsp. pepper
- 1 bay leaf
Directions

1Turn chuck roast in seasoned flour and brown on all sides in small amount of hot oil.

2Put the browned roast and vegetables into large roasting pan.

3Add the salt, pepper and bay leaf.

4Pour the can of beef broth over all and cover tightly.

5Bake at 375° for 1 hour, then reduce heat to 350° for 2 hours, or until meat is tender.
