- 1 lb. large shrimp
- 1 large onion
- 1 green pepper
- 1 1/2 c. coarsely chopped celery
- 2 c. sliced fresh mushrooms
- 1/2 c. margarine
- 1 to 2 Tbsp. cornstarch, dissolved in water
Directions

1Cook shrimp in about one quart of boiling salted water. Remove shrimp when water boils for 5 minutes.

2Clean shrimp.

3Set aside and save shrimp water.

4Saute onion, green pepper and celery in margarine until onions are transparent.

5Add mushrooms and cook one minute more.

6Add shrimp water and heat.

7Add dissolved cornstarch and cook just until thick and clear (about 1 minute). Add shrimp to hot mixture and serve over cooked rice.

8Pass the soy sauce.
