Easy Texas Rice

Ingredients
- 1 cup uncooked white rice
- 3 tablespoons oil
- 1 medium onion, quartered
- 1 bell pepper (seeded and quartered)
- 2 cups chicken stock
- 1 (16 ounce) can diced tomatoes
- 1 teaspoon chili powder (can use more or if desired you can use The Best Creole/Cajun Seasoning Mix)
- 1 teaspoon garlic salt
Directions

1In a saute pan, brown the rice in oil over low to medium heat, stirring constantly (watch closely as it burns easily).

2When the rice is brown, add the onion, bell pepper, chili powder and garlic salt.

3Turn the heat to high, and cook for 1 minute, stirring constantly.

4Add the tomatoes, and then chicken stock; bring to a boil, cover, reduce the heat, and simmer for 10 minutes.

5Remove from heat, and let stand for 15-20 minutes.
