- 22 ounces, weight Frozen (shelled) Edamame
- 2 whole Roma Tomatoes, Diced
- 1/2 whole Cucumber, Diced
- 1/2 whole Red Onion, Finely Diced
- 1/3 cups Extra Virgin Olive Oil
- 2 Tablespoons White Balsamic Vinegar
- 1 whole Lemon, Juce And Zest
- Pinch Of Salt And Pepper

1In a large bowl, combine edamame, tomato, cucumber and red onion.

2In a small bowl, whisk together olive oil, white balsamic vinegar, lemon juice and lemon zest. Taste and season with salt and pepper to taste. Pour the vinagrette over the vegetables and toss gently to coat evenly.
