- 12 corn tortillas
- 1 can cream of chicken soup
- 1 (7 oz.) can green chiles
- 1 red pepper, chopped
- 2 c. sour cream
- 3 lb. cooked chicken/turkey
- 3/4 lb. Monterey Jack, shredded
Directions

1In medium bowl, combine soup, chiles, red pepper and sour cream.

2Whisk well.

3Separate and set aside 1 cup.

4Mix chicken/turkey into remaining mix in medium bowl.

5Spoon 2 tablespoons of mix at each end of tortilla.

6Sprinkle each with cheese.

7Roll up and arrange in a shallow baking dish just large enough to hold enchiladas in single layer.

8Pour remaining cup of sour cream mix over enchiladas.

9Sprinkle with cheese.

10Bake at 350° for 30 minutes.
