  • 8 oz. shredded Jack cheese
  • 1/4 c. butter, melted and cooled
  • 5 eggs
  • 1 c. cottage cheese
  • 1/4 c. flour
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1 small can diced chilies

Directions

    Beat eggs, cottage cheese and butter.

    Add flour, baking powder and salt; beat well, then add cheese and chilies.

    Beat again and pour into an 8-inch buttered square pan.

    Bake at 350° for 35 minutes or until edges are light brown and center firm. This recipe can be doubled in a 9 x 13-inch pan, but will take longer to bake.
