- 6 hard-boiled eggs
- 4 medium scallions
- 1 bunch fresh watercress
- 12 cup chopped fresh parsley
- 14 teaspoon salt
- 2 teaspoons white horseradish
- 1 -2 tablespoon mayonnaise
- black pepper (to taste)
Directions

1Grate the eggs.

2Mince the parsley, watercress and scallions.

3Add salt, horseradish, mayonnaise and pepper.

4Gently fold everthing together.

5Mold into a mound and chill for several hours before serving.
