Ingredients

  • 6 hard-boiled eggs
  • 4 medium scallions
  • 1 bunch fresh watercress
  • 12 cup chopped fresh parsley
  • 14 teaspoon salt
  • 2 teaspoons white horseradish
  • 1 -2 tablespoon mayonnaise
  • black pepper (to taste)

Directions

    Grate the eggs.

    Mince the parsley, watercress and scallions.

    Add salt, horseradish, mayonnaise and pepper.

    Gently fold everthing together.

    Mold into a mound and chill for several hours before serving.
