  • 4 cans chicken broth
  • 1/4 c. julienne sliced onions
  • 1/4 c. julienne sliced carrots
  • 1/4 c. chopped celery
  • 1/4 c. broccoli or spinach, chopped
  • 2 eggs, well beaten
  • chopped green onion tops (scallions, for garnish)
  • soy sauce
  • sesame oil

Directions

    Bring broth to a boil.

    Simmer vegetables 10 to 15 minutes. Add beaten eggs and stir until eggs are cooked and stringy. Garnish with chopped green onions and a few drops of soy sauce and sesame oil.
