Ingredients

  • 1 c. chicken broth plus 2 c. water or 4 c. homemade chicken broth
  • 1 Tbsp. green onion, minced
  • 1 tsp. salt
  • 1 thin slice ginger root
  • 1/2 tsp. sherry
  • 2 eggs

Directions

    Beat eggs along with sherry.

    Place in saucepan the chicken broth plus water, salt and ginger slice.

    Bring to boil and remove ginger slice.
  4. 4
    Pour beaten eggs/sherry in thin stream into boiling soup while stirring.

    Remove from heat immediately.

    Garnish with green onion.

    Serve hot.
