- 1 c. mushrooms (fresh or canned)
- 3/4 c. minced onion
- 1 c. bean sprouts, chopped
- 1 tsp. soy sauce
- 1/4 tsp. salt
- 1 c. shredded cooked chicken, pork, shrimp, lobster or crab
- 5 eggs
Directions

1Slice mushrooms thin; saute in butter or margarine for 3 minutes.

2Add onion, meat or fish, sprouts and seasonings.

3Add this to the well beaten eggs; blend well.

4Drop from large spoon into frying pan with about 1/4 inch of hot fat.

5Brown one side; turn and brown other side.

6Serve hot with Chinese Sauce.
