  • 1 c. mushrooms (fresh or canned)
  • 3/4 c. minced onion
  • 1 c. bean sprouts, chopped
  • 1 tsp. soy sauce
  • 1/4 tsp. salt
  • 1 c. shredded cooked chicken, pork, shrimp, lobster or crab
  • 5 eggs

Directions

    Slice mushrooms thin; saute in butter or margarine for 3 minutes.

    Add onion, meat or fish, sprouts and seasonings.
  3. 3
    Add this to the well beaten eggs; blend well.
  4. 4
    Drop from large spoon into frying pan with about 1/4 inch of hot fat.

    Brown one side; turn and brown other side.

    Serve hot with Chinese Sauce.
