- 2 eggs
- 3/4 c. bean sprouts
- 1/8 c. ham, cut in slivers
- 4 shrimp, diced
- 1/4 tsp. salt
- few grains black pepper
- 1 tsp. soy sauce
- 1 Tbsp. cornstarch or flour
Directions

1Chop bean sprouts slightly and add to rest of the ingredients, except egg.

2Saute in a little oil in a hot skillet. Remove from skillet when cooked.

3Beat eggs and stir in cooked ingredients. Heat more oil in frying pan and put in enough egg mixture to form a small omelet.

4Fry on both sides until golden brown. Serve with chopped green onion, parsley or with the Sauce.
