- 3 Tbsp. oil
- 1/4 c. chopped green onions
- 4 c. cooked rice
- 1/2 c. frozen green peas
- 6 eggs, scrambled and chopped
- 2 cloves garlic, minced
- 1/2 c. cooked, chopped pork or small shrimp
- 1 tsp. low-sodium soy sauce
- 1/4 tsp. dry mustard
Directions

1Heat oil in a large skillet over medium heat.

2Add garlic and cook until soft.

3Stir in onions and cool for 2 minutes.

4Add rice, pork or shrimp and soy sauce.

5Stir and cook for 3 minutes. Add remaining ingredients and cook until heated thoroughly. Serves 6 (1 cup per serving).
