- 12 eggs
- 12 cup mushroom
- 1 green bell pepper
- 1 small yellow onion
- 1 red bell pepper
- 1 jalapeno
- 1 cup spinach
- 6 tablespoons goat cheese
Directions

1Preheat oven to 375 degrees.

2Generously grease a 12 muffin tin.

3Saute the onions, peppers, mushrooms, jalapeno for 5-7 min - stir in spinach at the end

4Whisk eggs.

5Divide sauteed veggies evenly among muffin tins.

6Add goat cheese evenly to tops.

7Pour eggs evenly into muffin tins.

8Bake at 375 degrees for 25-30 minutes until eggs are lightly browned.

9Let cool & remove from muffin tin.

10Serve and eat or store in the fridge (I've done up to 5 days and they've been good!)

11and microwave for 45 seconds before eating.
