- 1 (3 oz.) can flaked coconut
- 1/2 c. sliced blanched almonds, finely chopped
- 3 Tbsp. margarine
- 2 envelopes unflavored gelatin
- 1 1/2 tsp. rum extract
- 1/8 tsp. ground allspice
- 4 egg whites (room temperature)
- 1/4 tsp. salt
- 1/3 c. sugar
- 1 c. whipping cream

1Early morning or day ahead:

2Prepare nut pie crust.

3Preheat oven to 300°.

4In 9-inch pie plate with hand, mix coconut, almonds and margarine.

5Press mixture firmly onto bottom and sides of pie plate.

6Bake for about 20 minutes or until golden brown.

7Cool on wire rack.
