- 4 slices bacon
- 2 Tbsp. butter
- 2 Tbsp. minced onion
- 2 Tbsp. flour
- salt and pepper
- 1 c. milk
- 1 (6 oz.) pkg. crabmeat
- 1 Tbsp. sherry
- 1 1/2 c. shredded Swiss cheese
- 4 English muffins
- 8 eggs
Directions

1Fry bacon until crisp.

2Crumble and set aside.

3In a medium saucepan, melt butter and saute onion.

4Stir in flour, salt and pepper.

5Cook 2 to 3 minutes, stirring.

6Slowly stir in milk and cook 5 minutes until thick.

7Add crab, sherry and cheese, stirring to combine.

8Split and toast English muffins.

9Poach eggs.

10Arrange eggs on muffins and cover with crab sauce.

11Sprinkle with bacon and serve.
