Egg Salad Burritos

Ingredients

  • 3 eggs
  • 1 celery stalk finely chopped
  • 1/2 cup peas
  • 1/2 cup green beans
  • 1 tablespoon light mayonnaise
  • 1 teaspoon mustard
  • 1/2 teaspoon paprika
  • pepper
  • salt
  • 2 whole wheat tortillas
  • lettuce leaves approx 4-5
  • jalapeno peppers Pickled, 3-4 approx

Directions

    Hard boil the eggs, peel them and chop them up into small pieces.

    Mix the eggs, celery, peas, green beans, mayonnaise, mustard, paprika, salt, and pepper in a large bowl.

    Heat up the tortillas on a pan or in the microwave.

    Set one tortilla on a plate and place one or two leaves of lettuce on top.

    On top of the lettuce place approx. 2 tablespoons of the egg salad and some slices of jalapeno peppers.

    Roll up the tortilla and close it up with a toothpick before serving.
