- 200 ml evaporated milk
- 4 eggs
- 1 tsp vanilla extract
- 75 ml hot water
- 75 grams sugar, or to taste
Directions

1Make tart shells as below.

2Melt the sugar in hot water and leave to cool completely.

3Whisk the eggs and evaporated milk together.

4Strain the egg mixture into the sugar water and stir well.

5Carefully pour the egg custard into the shells.

6Skim off any air bubbles on the surface.
-
7Bake in preheated oven at 170C for ten minutes.

8To check if the custard is done, insert a toothpick in the middle.

9If it remains upright, the egg tarts are done.

10Replace water with pandan water (boil water with pandan leaves until tinged green) and add a drop of colouring for Pandan Egg Tarts.

11Serve warm :)
