  • Crust:
  • 4 T butter
  • 1 1/2 c. gingersnap cookie crumbs
  • Cheesecake:
  • 20 oz. cream cheese
  • 2/3 c. heavy cream
  • 3/4 c. sugar
  • 1/2 t nutmeg
  • 2 t vanilla
  • 4 large eggs
  • 3 T rum
  • Topping:
  • Heavy cream (optional)
  • Cinnamon (optional)

Directions

    1) Preheat oven to 350.

    2) Combine butter and crumbs, press into greased 10 in. springform pan.

    3) Combine cheesecake ingredients until well-mixed.

    4) Pour onto crust and bake 45 min. until set.

    5) Chill cheesecake.

    6) Optional: Top with whipped cream and cinnamon.
