- 2 c. all-purpose flour
- 2/3 c. sugar
- 1 Tbsp. baking powder
- 1/2 tsp. salt
- 3/4 c. eggnog
- 1/2 c. dark rum
- 5 Tbsp. margarine or butter, melted
- 1 egg, beaten
- 1/8 tsp. ground nutmeg
Directions

1Heat oven to 400°.

2Grease bottoms only of 12 medium muffin cups (2 1/2 x 1 1/4-inch) or line with paper baking cups.

3Sift flour, sugar, baking powder and salt into large bowl.

4Stir in eggnog, rum, magarine, egg and nutmeg, just until flour is moistened (batter will be lumpy).

5Fill muffin cups about 3/4 full.

6Bake until golden brown, about 20 minutes.

7Immediately remove from pan.

8Yields 1 dozen muffins.
