  • tomato soup

  • egg, beaten
  • cracker crumbs

Directions

    Peel and slice eggplant as for frying. Dip in beaten egg and cracker crumbs. Fry the slices. Make stacks, alternating eggplant, undiluted tomato soup and grated cheese, using 3 slices of eggplant to each stack. Bake in 350° oven for 30 minutes.
