- 1 medium onion
- 2 eggplants
- 2 1/2 Tbsp. Italian dressing
- 16 oz. tomatoes
- 1/2 c. bread crumbs
- 8 oz. tomato sauce
- 2 Tbsp. vegetable oil
- 2 Tbsp. water
- 1 egg
- 2 c. Mozzarella cheese
Directions

1Cook onion in oil until tender.

2Stir in tomatoes and Italian dressing; simmer.

3Slice eggplant 1/4-inch thick.

4Combine water and egg.

5Dip in bread crumbs.

6Put tomato sauce over eggplant and cover with Mozzarella cheese.

7Bake at 350° for 25 minutes.
