- 1 eggplant, peeled and cut in 1-inch cubes
- 1/2 c. milk
- 1 small onion
- 1/2 c. buttered crumbs
- 1 egg, beaten
- 2 Tbsp. melted butter
- 1 c. bread crumbs
Directions

1Cook eggplant in boiling salted water for 8 minutes, drain. Add egg, milk, butter, onion and dry crumbs.

2Place in greased casserole and top with buttered crumbs.

3Bake at 350° for 30 minutes.
