- 1/2 lb. bacon, sliced across to 1-inch pieces
- 1 clove garlic, minced
- 1 medium round onion, diced
- 1 round or thick long eggplant
- 1 large tomato
- fresh mushrooms (as much as you like)
- 1 1/2 c. water
- 1 Ramen or saimin flavoring
- 3 Tbsp. flour or 2 Tbsp. cornstarch
Directions

1Cook spaghetti enough for four.

2In a large skillet brown bacon and add garlic and onion.

3Let cook for 1 minute.

4Add eggplant; cook until done.

5Add tomato and mushrooms; cook for 1 minute.

6In a small saucepan add 1 to 1 1/2 cups water.

7Add Ramen or saimin flavor packet.

8Thicken sauce with flour or cornstarch.

9Place spaghetti on platter; pour on bacon and vegetable mix, then sauce. Serve hot.
