- 1/2 c. fine dry bread crumbs
- 1 tsp. oregano
- 1 medium eggplant, cut into 1/2-inch pieces
- 1/2 tsp. garlic
- 1/2 c. butter or margarine, melted
- 1 (8 oz.) can tomato sauce
- 1/2 c. grated Parmesan cheese
Directions

1Heat oven to 400°.

2Mix crumbs, oregano and garlic.

3Dip eggplant slices in butter, then in crumb mixture.

4Place in single layer on sprayed jelly roll pan.

5Spread evenly with sauce. Sprinkle with cheese.

6Bake 20 to 30 minutes.

7Serves 4 to 6.
