- 4 large portobello mushroom caps
- 4 oz fresh mozzarella
- 1 eggplant
- 1 large tomato
- 4 burger buns
- 1 fresh basil
- 1 fresh oregano
- 1 ground black pepper
- 1 olive oil, extra virgin
Directions

1Preheat grill

2Peel eggplant and slice crosswise into 1/4 inch thick rounds

3Slice mozzarella into 1/8 inch rounds

4Slice tomato into 1/4 inch rounds

5Toss mushrooms and eggplant in a bowl with minimal amount of olive oil; just enough to lightly coat.

6Grill mushrooms, eggplant and tomatoes

7(optional) Toast buns and set aside.

8Turn off grill.

9While still on hot grill, season eggplant slices and top with mozzarella slices.

10Close grill cover and allow cheese to melt.

11Top eggplant /mozzarella with grilled mushroom then top off with grilled tomato slice

12Transfer the stacked s'mortobello to a bun.
