- 1 c. chopped onion
- 16 oz. can tomatoes
- 1 tsp. basil
- 1 1/2 tsp. salt
- pepper
- 1/4 tsp. garlic powder
- 1 c. shredded Mozzarella cheese
- 3 c. hot cooked rice
- grated Parmesan cheese
Directions

1Peel and cook eggplant in salt water until tender; drain. Brown beef and onion.
