- 2 large eggplants
- 1 small onion, chopped
- 1 egg
- 1/4 lb. grated cheese
- 1/2 tsp. sugar
- salt and pepper to taste
- 1/2 lb. ground beef, browned
- 1 can cream of mushroom soup
- 1/2 soup can whole milk
- 1 c. cracker crumbs
Directions

1Cook eggplant and onion; drain off water.

2Add remaining ingredients except cheese; mix well.

3Pour mixture into a casserole dish.

4Sprinkle cheese on top.

5Bake in a 375° oven for 40 minutes.
