- 1 medium to large eggplant
- 1/4 c. butter
- 1 egg
- 1 medium onion
- 3/4 c. grated cheese
- 1 c. milk
- 1 c. cracker crumbs
- salt and pepper
Directions

1Peel and cut eggplant in chunks.

2Boil in salt water until tender; drain.

3Add slightly beaten egg, onion, cheese, milk and seasonings.

4Mix well and top with crumbs.

5Bake at 350° for 30 to 40 minutes.
