  • 1 cup milk
  • 1 large or 2 small eggplants
  • 2 tablespoons butter
  • salt to taste
  • 1 cup cracker crumbs
  • 1 cup grated cheese

    Beat together eggs, milk, eggplant, salt and cheese.

    Cover with crackers and butter.
