- 3 eggs
- 1 cup milk
- 1 large or 2 small eggplants
- 2 tablespoons butter
- salt to taste
- 1 cup cracker crumbs
- 1 cup grated cheese
Directions

1Beat together eggs, milk, eggplant, salt and cheese.

2Cover with crackers and butter.

3First of all, peel eggplant and cut into about 1-inch squares.

4Cook 3 minutes and drain.

5Put mixture in large casserole and bake at 350° for 45 minutes.
