Eggplant Casserole

Ingredients
- 1 large eggplant
- 1/2 c. medium onion
- 1/2 c. green pepper
- 2 large tomatoes or 1 canned peeled
- salt and pepper to taste
- 1 Tbsp. brown sugar
- 1 beaten egg
- 1/2 can cream of mushroom soup
- 3 to 5 crackers
Directions

1Peel and cube eggplant and cook until slightly tender.

2Drain and cool.

3In skillet saute onion, green pepper and tomatoes.

4In large casserole dish combine the eggplant with beaten egg, 1/2 can cream of mushroom soup and crackers to thicken the mixture.

5Bake at 350° for 30 minutes or until bubbly.

6Remove from oven, cover with favorite cheese.

7Place back into oven long enough to melt cheese.
