  • 1 large eggplant peeled, diced and cooked till tender
  • 1 lb mushrooms, sauteed
  • 1 onion, chopped and sauteed
  • 1 c cooked celery, sauteed
  • 2 c cooked rice
  • 1/2 c cream
  • 2 beaten eggs
  • Buttered bread crumbs

Directions

    Combine first 5 ingredients and place in a buttered casserole dish.

    Beat cream and eggs together and pour over eggplant mixture.

    Top with bread crumbs.

    Bake at 350 degrees for 1- 1 1/4 hours.
