- 1 lb mushrooms, sauteed
- 1 onion, chopped and sauteed
- 1 c cooked celery, sauteed
- 2 c cooked rice
- 1/2 c cream
- 2 beaten eggs
- Buttered bread crumbs
Directions

1Combine first 5 ingredients and place in a buttered casserole dish.

2Beat cream and eggs together and pour over eggplant mixture.

3Top with bread crumbs.

4Bake at 350 degrees for 1- 1 1/4 hours.
