Ingredients

  • 1 medium eggplant
  • 1/2 stick oleo
  • 1 egg, well beaten
  • 3/4 c. milk
  • pepper to taste
  • cracker crumbs

Directions

    Peel and slice eggplant.

    Boil in salted water until tender, drain and mash.

    Mix in oleo, egg, milk and pepper to taste.

    Pour into baking dish, cover with cracker crumbs and dot with butter. Bake at 350° until light brown.
