- 1 medium eggplant
- 1/2 stick oleo
- 1 egg, well beaten
- 3/4 c. milk
- pepper to taste
- cracker crumbs
Directions

1Peel and slice eggplant.

2Boil in salted water until tender, drain and mash.

3Mix in oleo, egg, milk and pepper to taste.

4Pour into baking dish, cover with cracker crumbs and dot with butter. Bake at 350° until light brown.
